Kale salad with Garlic Balsamic Vinaigrette

This bright colourful salad is filling on it’s own for lunch or a nice side dish with supper. The key to a great kale salad is in massaging the dressing into the leaves so they wilt slightly so the texture is a little less coarse. The combination of sweet, salty, tart and savory makes this recipe one the family will be asking for again and again.
It also keeps for several days in the fridge so it’s a great “make ahead” dish.

- 4 cups kale
- Trim leaves from stock Chop add dressing and massage
- add chopped red peppers
- add crumbled feta cheese
