Orzo Salad with Garlic Balsamic Vinaigrette

Ingredients
  • 1cup orzouncooked, or any small pasta
  • 1/2cup green onionschopped
  • 1/4cup red pepperlarge sweet, about 1/2
  • 1/4cup tomatofinely diced
  • 2cobs corn
  • Snell House Garlic Balsamic Vinaigrette
  • saltto taste
  • pepperto taste
Instructions
  1. Cook the pasta to el dante stage and cool completely.
  2. Slice the corn off the cob and toss it in a bowl together with the green onion, red pepper and tomato.
  3. Add the pasta and about ½ a bottle of vinaigrette.
  4. Taste and add salt and pepper if you like.

It’s ready to eat right away or keep it in the fridge for several days.
