Ingredients
  • 1jar Snell House Foods Smokey Baked Beans
  • 1cup grated cheddar cheeseUse more if you like it more cheesy. You can also use vegan cheese as long as it has a nice melt factor.
  • 1Tbsp Nouri+Bites spicy Mexican seasoning saltSee www.nouribites.com to purchase or use your favourite Mexican seasoning
  • 1/2cup Snell House SalsaChoose your favourite from Shy, Black Bean & Corn, cilantro or Garlic
  • 1ripe avocadoMashed or substitute with Guacamole https://snellhouse.net/recipe/guacamole-in-seconds/
  • 1/2cup sour creamYou can substitute a vegan sour cream
  • 3Tbsp Snell House Southwest sauceChoose from Sunrise (mild), Heat (medium) or Scorch (hot)
  • 1/4cup chopped green onionOptional
  • 2 – 3Tbsp chopped fresh cilantroOptional
Instructions
To make the bean layer
  1. Heat the beans in a suitably sized pot over medium low heat.
  2. Once the beans are heated through, add the Mexican Seasoning and 1/2 – 2/3 of a cup of the cheese.
  3. Stir until fully combined and the cheese if fully melted. Taste and adjust seasoning to your taste.
  4. Set aside to cool somewhat, while you prepare the remaining layers
To make the guacamole
  1. Mash the avocado in a bowl. A quick trick I find is to dice the avocado in it’s half shell first. Then scoop it out with a spoon. You can stop hear and just use the mashed avocado, or go to the next step to create a simple guacamole
  2. Mix in 1 – 2 Table Spoons of your favourite salsa and a pinch of salt. Note: the Back Bean and Corn Salsa is not recommended. Alternatively, you can use any other guacamole
  3. Set aside
Layering the dip
  1. Choose a container big enough for all the ingredients and small enough that you will see nice layers – for a great presentation choose a clear glass container
  2. First smooth the Bean mixture in the bottom of the container
  3. Then layer the Avocado or guacamole
  4. Next spread a layer of sour cream
  5. Pour the salsa on top
  6. Sprinkle with remaining grated cheese
  7. Drizzle the top with your favourite Snell House Foods southwest sauce
  8. Optionally, garnish with sliced green onions and chopped cilantro
  9. Serve with corn chips, pita bread or chips or nan bread
