Ingredients
  • 1 Sweet potatolarge peeled
  • 1 potatolarge white, yellow or red*
  • 2 carrotslarge peeled
  • 1bunch green onions
  • 1/2cup Snell House Garlic Balsamic Vinaigrette
Instructions
  1. Preheat over to 400 degrees.
  2. Chop the potatoes and Carrots into attractive finger sized pieces.
  3. Cut the green onions into 1 inch pieces.
  4. Toss all ingredients together in a large casserole dish until everything is well coated.
  5. Bake uncovered in the oven for 45 – 60 minutes.
Recipe Notes

*Try using a combination of white, yellow and red potatoes.
