Boil the potatoes until cooked but still firm – don’t over cook them or they will become mashed potatoes.
5 minutes before the potatoes are ready add the celery to the pot just to blanch it.
Drain the potatoes and celery thoroughly and place in a salad bowl.
Add the peppers, green onions and just enough olive oil to coat them well.
Pour Snell House Classic Garlic Dressing over the mixture (about ¼ cup or to your liking) and mix well.
Add the tomatoes last so they keep their shape.
Add salt and pepper to your own taste.
Serve warm and enjoy.
